Después de haber dejado formalmente de correr por una lesión en un tobillo hace casi 4 años y solo hacerlo eventualmente y siempre con dolor, adquirí unos Vibram TrekSport para ver si este tipo de zapato me daba mejor resultado. El primer día recorrí 6 km. entre caminata y trote, y la sensación fue increíble, el esfuerzo era como un 10% menor y la sensibilidad con el suelo me hacia sentir como si fuera descalzo pero protegido. Al día siguiente trote los 6 km. completos y quedé más que convencido, no tengo el dolor acostumbrado que sentía en el tobillo, solo unas pequeñas molestias en los pies en general, debido a que con este tipo de zapatos se activan músculos que con los zapatos normales no. Lago de Coatepeque (Outer Rim) Again

Después de haber recorrido el lago por el camino que lo circunda a nivel del agua decidimos, al día siguiente, hacerlo por la carretera que lo rodea por arriba, el lago es como un cráter, tiene una camino alrededor en la base y otro que lo circunda a medias unos 350 mts más arriba, este camino se une al de abajo en los extremos sur y norte del lago. En el extremo sur hay un cementerio y luego una bajada de piedras de 2 km de largo que termina en el otro camino, en esta bajada rompí mi llanta trasera pero afortunadamente estabamos muy cerca de la casa y llamamos para que nos llegaran a recoger en lancha. En todo el recorrido disfrutamos de unas agradables vistas del lago y de fincas de café, y de un delicioso desayuno en uno de los sencillos comedores al lado del camino. Past weekend we went to Lake Coatepeque in El Salvador to spend some time with our relatives. As many times in the past, I brought my bike so my brother in law and I could ride some miles. After crossing the lake from the little island were the house is, we took the dirt road that circles the shore of the lake, the day was cloudy and fresh, next to the road you can find some places to eat a very good huevos and tortillas enjoying at the same time the beautiful landscape. Los días sábados generalmente han sido para descansar y con el domingo han formado parte del fin de semana. En Guatemala el sábado es para algunos un día completo de descanso y para muchos un día que se trabaja medio tiempo. De unos meses para acá he decidido que todos los días (para mí) serán sábados, es decir, que todos los días trabajaré pero también descansaré y/o haré otras actividades distintas a las que mi trabajo diario me limita, estas actividades también pueden ser laborales, pero serán labores diferentes a las "diarias", si antes dedicaba ciertos días para atender otros trabajos, ahora lo haré los sábados, y como los sábados son todos los días, pues trabajaré en eso siempre que quiera, descansaré siempre que quiera, jugaré con mis hijos, haré deporte, visitaré una galería, cortaré la grama, tocaré batería, venderé café, diseñaré un logo, tomaré una foto o saldré a cenar con mi familia siempre que quiera. Este, considero que será un gran cambio en mi rendimiento y de hecho ya lo he experimentado, no hay remordimientos pues siempre tengo tiempo para hacer lo que quiero y con mejor actitud los resultados son mejores. Piénselo y pruebe hacerlo el sábado.

Considero que la red social FB es un medio funcional para mantenerse en contacto con amigos, familiares, clientes o admiradores, pero por su misma naturaleza resulta un tanto complicada su adecuada administración, ya que en un mismo lugar puede uno albergar a diferentes personas con diferentes grados de afinidad o confianza, por ejemplo, un colega puede tener el grado de confianza de una familiar pero no hay formas fáciles de diferenciar a uno del otro en el momento de exteriorizar un "post", además existe una tendencia generalizada a manifestar públicamente actividades que por su contenido se puede deducir que deberían ser privadas o al menos con un rango de alcance más limitado, considero que aunque la tendencia sea esa, es mucho más conveniente mantener un perfil bajo si nuestra audiencia es amplia y heterogénea. La invasión a la privacidad, la dependencia a estar "conectados" y la manipulación que estos medios pueden ejercer son factores a los que el ser humano tendrá que irse acomodando mientras experimenta y por prueba y error aprende las implicaciones de su uso.

En países como Guatemala, donde a pesar de ser exportadores de excelentes cafés, la cultura de beber un buen café no es prioridad, considero importante transmitir a los jóvenes y a la gente en general el conocimiento adquirido para preparar, degustar y diferenciar una buena taza. Un factor que incide en esta tarea es el abismo de precios entre un café de exportación estrictamente duro y los cafés que se ofrecen localmente. El consumidor habitual de supermercado no logra accesar a cafés de mejor calidad ya que éstos son comprados a mejores precios en el extranjero y debido a esto, carece de factores más amplios de comparación. En P11 nos esforzamos por ofrecer localmente un excelente café reseñado internacionalmente, además, el comparar P11 con otros nos ayuda a entender las diferencias y así tener un mejor punto de vista. La educación debe empezar temprano, de esa forma llegaremos a tener una sociedad más entrenada y exigente, lo que conlleva a un mejoramiento general de la calidad del café que consumimos.

Siguiendo la propuesta de plantar cafetales nos propusimos este fin de semana empezar con 40, en esta jornada el procedimiento era sencillo; yo habría los hoyos y mis acompañantes sembraban los cafetos, al cabo de poco más de una hora y media habíamos terminado por lo que procedimos a hacer nuestro picnic -hamacas y relax incluídos-. El área por estar situada a 2,000 mts. sobre el nivel del mar posee un clima templado y agradable, aunque a la sombra y entre árboles suele sentirse un poco frio. En los alrededores existen muchas siembras de hortalizas en donde uno puede ir notando el crecimiento y desarrollo de los vegetales y de su proceso de cultivo. El altiplano guatemalteco posee suelos muy fértiles alimentados por el humus y por cenizas volcánicas por lo que son muy apreciados para el cultivo de frutas, legumbres y café.

El café es apasionante, no solo desde el punto de vista de degustarlo y diferenciar sus complejidades sino también el proceso de recolección, beneficiado, secado, tostado, etc. Ahora que han empezado las lluvias me he propuesto sembrar unos doscientos cafetales para estar más cerca del proceso. Como comprador de café y diseñador de blends uno deja el proceso agrícola a los productores, considero que sembrando mis propios cafetales podré entender mejor y cerrar el ciclo. Es como si ud. viviera en Francia y le gustara el vino, tuviera la oportunidad de comprar uvas, mezclarlas para producir una bebida especial y eventualmente sembrar viñas para ver su crecimiento. Guatemala es un país maravilloso donde cualquier emprendimiento de este tipo no esta lejos de la esquina. Ya actualizaré en futuros posts esta nueva aventura.

Nuevamente la finca El Socorro se adjudicó el primer lugar para la reciente versión del Cup of Excellence. Gran parte de nuestro café proviene de esta finca y de la finca San Guayabá de los mismos propietarios. Llegar a ser finalista en esta contienda requiere de mucho esfuerzo, sobre todo si tomamos en cuenta que los procesos que se requieren son artesanales y realizados por diferentes equipos de gente con escasa erudición. I spent sometime drinking espressos to then jump to lattes, then to americanos, cappuccinos, espressos again and so on, each time trying to master the process and looking for the best bit of anything to accompany the drink, formulate my solo philosophy and try to be an expert in that stuff, only to find myself far from the "truth" in the next round I come along. Each round proves to open new ways and points of views, this creative process I have found very productive in other aspects of my work, design, art, photography, music, coffee.

After 50 days off the bike due to a preference for running, I returned to my usual trail, just to find bulldozers have changed the ground, where there was dirt and trails now there is asphalt and flat terrain ready for building townhouses. Guatemala is growing very fast, I think it's time to change my tires or change the route.

These Holidays we made a trip to El Salvador and visited the coffee region of Apaneca, 90km West from San Salvador (some 35 km from the Guatemala East border). These highlands are full of farms at the side of the road where coffee is planted in the shade among a very organic variety of trees. Apaneca is a tourist destination, there you can find restaurants, hotels, handicrafts shops, everything in a fresh atmosphere around 1,500 mts above sea level.

Often we forget about how to enjoy a plain delicious coffee, here the recipe: find a personal (12oz) french press coffeemaker, add 20g of medium ground coffee (P11 Obscuro or Café), add 12oz of very hot water (almost boiling), let rest 4 minutes, press the plunger, serve in tiny 3oz cups (they preserve better the coffee and let you focus in aroma and taste), avoid sugar, instead escort with chocolate.
